
England - Fairmont Hotels & Resorts has officially expanded its United Kingdom portfolio with the opening of Fairmont Cheshire, The Mere, a luxury countryside resort nestled within England’s northwest.
The five-star property launched following a comprehensive £125 million (€146.7 million) developer-led transformation of what was previously known as The Mere Golf Resort & Spa. The destination marks Fairmont's fourth property in the UK, joining an elite lineup that includes The Savoy in London, Fairmont Windsor Park, and Fairmont St Andrews in Scotland.
Situated just outside the market town of Knutsford, the resort occupies 157 acres of countryside with direct views over The Mere lake. The property positions itself as an accessible rural escape, located 30 minutes by road from Manchester and less than an hour from the Peak District.
The resort features a total of 116 guest accommodations, including 23 dedicated suites.
A primary fixture of the redevelopment is the debut of Gordon Ramsay at The Mere, the resort's flagship dining venue. The restaurant features a British-inspired menu highlighting Ramsay's signature beef wellington, with seating split between a main dining room, a private event space, and an outdoor lakeside terrace. The venue is paired with a speakeasy-style cocktail bar.
